For reference, I'm running 19x9.5 et19 and 19x11 et25 with 275/30 and 295/30 with no rubbing. And I'm at the lowest settings on the KW Sleeve Kit.
I say go for the 9.5/11" setup. Even if you didn't want to run a wider tire the bigger lip on the 11" looks better to me.
