Any thoughts on if these wheels (offsets in the title, and meant for an E46 M3) will fit the E92 M3s? Would I need spacers? What is the max tire size I can run?

I imagine a 265/295 set-up on these puppies for track-days...hopefully my imagination is not running wild!!!!
Yes, you can use these wheels on the new E92 M3 you are going to purchase.

With the offsets you posted, the front wheels would require spacers, and the rear wheels are going to come very close to rubbing the outer fender in the rear.

Here is what I recommend for your Volk wheels:

Front 18x9.5 +35mm wheel setup: 10mm hubcentric spacers to adjust wheel offset to +25mm, Tires: 275/35/18

Rear 18x10.5 +22mm wheel setup: No spacers required due to the aggressive offset, Tires: 295/35/18 with some additional negative camber to avoid rubbing the outer fender. (depends on the tire brand you choose)
