Stock brakes holding up don't surprise me a bit. What gets brakes hot (and boiling, fading, delaminating, pad transfer or perhaps worst igniting...) is not single moderate applications from high speed but the repeated application from medium (or high speeds). A track works brakes infinitely harder than dragging. The M3 stock brakes are good enough for most novice or beginners on the track with non track shoes. Once you can out brake your car with track rubber you can simply go for upgraded lines and fluid and most importantly pads. You have to be a purposefully hard and/or talented driver to over power such a system.
