Weekend getaway sounds fun. Take her to see a concert or something like that. I would probably just have a day/night out on the town- dinner, movie, drive, go on a boat ride, horse drawn carriage, wine tasting, etc. You don't wanna do too much because it sets you up for higher expectations the next time around.
