well the purpose of a notary is to have an official recorded witness to verify the signature came from who it's supposed to be from. that's why many notaries verify and record your ID information before you sign in their presence. if two parties are to sign a document, you don't necessarily have to have them present at the same time, but rather another notary can notarize the other party's signature when they sign at their convenience.
