If possible you want to try and minimize the width of a winter tire, compared to a summer tire.
Given your wheel widths and offsets I'd probably try #2 - 255/40 and 265/35. The 255/40-18 is very close in diameter to the stock 245/40-18 - 26.0" vs. 25.7".
Option #3 would work ok but I'm wondering if the 245 would be too stretched on a 9.5" wide wheel?
