The stock pedals? I can maintain brake pressure during heel and toe but it took a lot of practice and I guess the fact that my last four cars have been BMWs with identical pedals has helped a lot. Pay close attention to the Gs you feel during braking and aim for a consistent feeling of deceleration through the downshift, you'll get it in no time.

I've only been around Laguna Seca once but I liked treating turn 2 as a single apex better than trying to double-apex, you just lose too much time trying to cut a clean line through both apexes and you have to slow down more coming off of the straight / turn 1.
