I think most people (outside of Germany, anyway) don't do a whole lot of driving at 100mph simply because of the legal issues involved, not because of fear of screwing up the break-in. But as for RPM, I would definitely go all the way to 5500rpm somewhat frequently. Staying at or below 3000RPM is not a great idea IMHO, since you are supposed to vary the RPM through the entire allowed ranage.
I hit 5500rpm very frequently once the car is warmed up pre 1200 miles. Sometimes if I'm at 65mph I put it in 3rd (6mt) and let it sit at about 5k rpm for like 10 seconds and then go to another gear.
