The toe change is kind of a good thing...like a twofer. You don't need toe-in on the track. You'll get more negative camber and probably a little toe out on the track. You can get your alignment done for street, then tip the hats, remeasure toe and see if thats ok for track. Just play around with it until it works for what you need it to.

Toe isn't affected that much for each degree of camber at stock ride height.
