Are you installing the camber plates yourself and then just driving the car to the shop to get the alignment done?
If that's the case just set them close to the "min" camber setting - it really doesn't matter if you're not going to put a lot of miles on the car before getting the alignment (however, using min camber setting should minimize any increase in toe out). Some plates have a hard stop at the "min" setting and others have a marking of some kind (e.g., "0", CL, etc).
