I think V8s sound better in general, but I will say that the 599GTO's V12 is pure audible sex. I have a serious love for cars that have booming exhausts mated to gearboxes that deliver gunshot downshifts (SLS AMG's downshifts are godlike) and the GTO's is possibly the best of the best.
In general though, I tend to prefer this hierarchy: V10 > V8 > V12

V8s don't have a constant exhaust flow, which has never sounded as good as the smoothness of an I6 or V12 to me.
