Why couldn't LC intitiate with a press of a button, or simply by pulling both paddles... Then let the computer do all the necessary steps. Simple!

Because imagine all the soccer moms and such that drive these cars that would kill themselves if LC was easily activated. The way it is setup now, you MUST REALLY WANT TO USE LC in order to use it. No chance you would mistakenly activate it.
Remember, lots of non-enthusiasts buying these cars.
