You throw enough hp/tq at something and you can get a quick time even if you slide through the corners.
Also, I don't know how much faith i put in to "Ring" times because as far as I know there is no official sanctioning body to validate official "records."

There is no sliding through the corners unless you are playing. Most guys replace the 255s in the rear with 275s and the traction is fine. The car is very balanced and handles well. You are using the Top Gear test drives of pre-2012 cars and the hooligans they did as evidence of the balance and capability of the 2012 cars. I have a lot of track time in the M3 and the C63 and, as I have said before, your description isn't accurate but is maybe expected
The M3 is better at the track (mainly because the DCT is better and it handles heat better) but it is very close... very close. IMO, it is a drivers race.
