Have you considered 2 Go-Pro's? You could stick one to the front windshield and one to the rear quarter window. They are fairly easy to sync I think because you can start them both at the same time via the wifi control (remote or app).

No Sunroof. I'm looking at reclining my pax seat back and use the rear glass panel instead. Just afraid that mounting too far back will capture too much darkness in the cabin which means the camera can't capture anything bright out the windscreen.

Only have 1 Gopro at the moment. Might consider using my NEX 6. Its heavier so I think it will pick up vibrations.
Use spot setting on and itll capture the outside just fine.
