They are curved because they are attempting to have equal length for all of the cylinders. Look it up for more details, but what equal length headers do is allow for cylinders that are 180 deg out of synch w/ respect to firing order from benefiting from the pulse wave created by a closing valve to help scavenge ("pull") the exhaust out of the corresponding cylinder that is just opening its exhaust valve. There's negative pressure behind the pulse wave, which allows the positive pressured exhaust that's existing from the corresponding cylinder to move with more intesity and higher speed (tube diameter held constant) towards the negative pressure.
