I really like your tire choices, but as mentioned above, the 295's or 305's may rub in certain conditions. But if you're definitely going 11" wide wheels, there's no point in stretching a 275 onto them. If you were playing it safer, you could have just gotten a 10" wheel.

If you're going with the big steamroller widths, be prepared to accept an occasional rub, or tinker with the fender wells and camber setting until it works.

As far as RE11 vs AD08, they both rock. Yoko probably a little higher ultimate dry grip, RE11 a little more smooth and controllable at the limits. Both are about as good as it gets for a street tire with some track ability.
