It depends on what you're cooking. You don't want to use Chicken stock with a beef dish. And you definitely don't want to use beef stock with a fish meal.

to take it one step further, as a mildly trained cook...i kinda like to mix my stocks and broths...like lobster stock with a rich meat dish....and vice versa.
