Well, 1911 is a pretty intricate gun and a number of mods you can do to it, is virtually endless. Every single part can be replaced with something better.
Getting a cheap 1911 has one huge disadvantage - they are mass produced and tolerances suffer, thus reducing accuracy, but at the same time it has it's advantages - you don't have to drop $3-5K on a gun right away. People use something like a Springfield as a baseline and go to town.
Weld new slide rails, replace springs, triggers, hammers, matched barrel and barrel bushing, replace guide rods, mainspring housing with or without magwell, replace MIM (Metal Injection Moulding) parts with billet machined parts, grips, sights and so on...
Pretty much every modification, except cosmetic ones, affects the gun in one way or another. Hell, even cosmetic ones like grips or front and back strap checking may affect the feel, which in turn may affect your shooting.
